I'm trying to come up with the age of Captain Jack. I'm guessing he's about 30 when we first meet him in Season one-Torchwood. If he was born in 5094, and he started as a time agent about age 25. He worked as a time agent for about ten years and then went rogue. After the time he met Rose, he became immortal. So..how old is he when we first meet him?

This question is hard to answer, I'd say.
When we first meet the man calling himself 'Captain Jack Harkness' in S01(27)E09 'The Empty Child' he had already quit being a time Agent and had become a con man. So given your numbers he would be 35+. But that doesn't take into account that he spent 5 years in a time Loop and that we know next to nothing about his past...
Any guess is as good as the next.

One option is to assume that when we first saw him he was the age John Barrowman was at the time (38) and work from there. After The Parting of the ways he timeported to Earth 1870, the year an explosion created by the Doctor to trap the Gelth turned the Cardiff rift into something major, so by the time he got to 2005 again, he was 135 years older, then there's the time he was buried by Gray in AD27, so when he got back to 2007, the slow way, he'd added another 1980 years to his age. So add the 135 and the 1980 to John Barrowman's current age and Jack is 2161. If you prefer to work on different assumptions, you will get a different answer.
